I’m sure lots of people will love this Copycat Bojangles Sweet Potato Pie! Bojangles serves one of the best and most unique sweet potato pies, so why not make it at home?

This copycat recipe is not the perfect replica of Bojangles Sweet Potato Pie, but it turns out delicious, I made it my own style using classic ingredients for a sweet potato pie, like sweet potatoes, of course (mashed until smooth). I also used unsalted butter, sugar, and evaporated milk, which makes it even better, along with ground cinnamon and nutmeg.

I don’t focus too much on the shape and appearance, even though that’s important. The one served at Bojangles has a hand-pie shape, like a pocket, but I made mine like a classic sweet potato pie. For me, the taste is the most important thing, and it turned out delicious.

Ingredients

  • 2 medium sweet potatoes (about 1 ½ cups mashed)
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • ½ cup evaporated milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 unbaked pie crust (9-inch)

How to Make Bojangles Sweet Potato Pie?

Step 1:

Preheat the oven to 350°F (175°C). This makes sure the pie bakes evenly.

Step 2:

Cook the sweet potatoes by boiling them in a pot (about 20 minutes). Let them cool, peel off the skin, and mash until smooth.

Step 3:

Mix the filling in a large bowl. Add the mashed sweet potatoes, melted butter, sugar, evaporated milk, eggs, vanilla, cinnamon, nutmeg, and salt. Stir well until smooth.

Step 4:

Pour into the pie crust and Bake for 45–50 minutes until the center is set. After that Enjoy.
