I tried to make this Copycat Santiago’s Green Chili just like the one served at their restaurant but still I made it tasty and hearty and so good to enjoy with a slice of lasagna.
I love to enjoy chili with lasagna or pasta dishes that have tomato sauces and I don’t know the reason but it’s just so good, especially during the winter seasons and definitely these types of dishes are on my list.
This Copycat Santiago’s Green Chili turned out so delicious and I used some ingredients that I’m sure they use to make the same chili in the restaurant so I used chicken instead of pork and vegetable oil and some onions and roasted green chilies that were peeled and chopped plus of course chicken broth and the cooking process is easy and simple just like any chili you’ve made before.

How to Make Santiago’s Green Chili?

Start by heating the oil in a big pot and when it gets warm add the pork pieces and cook them until they turn golden brown because that is what makes them taste rich and full of flavor.

Add the chopped onions and garlic to the pot and stir everything together until the onions become soft and the garlic smells wonderful because that is when all the flavor starts to build.

Now add the roasted green chilies and mix everything well so all the colors and smells come together and make the chili start to look beautiful.

Pour in the chicken broth and then add the salt and pepper and cumin and stir everything together so it all blends into one tasty mixture that will soon turn into a thick and rich sauce.

In a small bowl mix the flour with water until it looks smooth and creamy then pour it slowly into the pot while stirring so the chili starts to thicken and look even more delicious.

Let the chili cook on low heat for about one hour and stir from time to time so it doesn’t stick to the bottom of the pot and so the meat becomes soft and tender and the sauce gets smooth and perfect.

When it is ready taste it and if you like you can add a little more salt or pepper and then serve it warm in bowls or over rice or even over burritos and enjoy how good it tastes.

Variations
I will start with pork, if you do not have it, you can use chicken as I did and it will still taste wonderful and if you like stronger flavors as I love, you can use beef instead and that will give it a deeper taste for sure and if you like vegetables you can add beans to make it thicker and if you like a little tangy taste you can even add diced tomatoes, this chili always comes out good no matter how you make it.
Tips for making the best Santiago’s Green Chili
To make the best chili always start by browning the meat because that step gives it a deep and strong flavor that makes the whole dish amazing and do not rush the cooking either because the longer you let it simmer the softer the meat becomes and if you can always use roasted green chilies because they give a smoky taste that makes this chili more good and if you want your chili thicker cook it without a lid and if it becomes too thick add a little more broth to get it just right for you.
